The freshness of Ricotta is essential. It can be eaten as is, mixed until creamy with a little sugar and grated lemon zest, chocolate chips, raisins or dried fruit or whatever catches your fancy.
Not to mention cannelloni or lasagna with ricotta and spinach, pies and cheese-cakes or stuffed pasta.

Welcome! We are cheesemakers from Italy, making award winning cheeses like Mozzarella and Ricotta right here in New Zealand from locally sourced cows' milk. All our cheeses are handmade without any preservatives. We make them according to the cheese-making traditions of Puglia, Italy.
We sell our cheeses at farmers' markets around Auckland and we supply some of the best restaurants here. So you might have already come across our Mozzarella. If you're in Auckland, go to our 'Where to Buy' page to find out which markets we'll be at. Hope to catch you there!
