Developed from the historic 774 AD "Brie de Meaux" recipe, Lindis Pass is Whitestone's latest brie creation. Designed to satisfy the most discerning cheese lover, this brie style requires full ripening to realise its potential, releasing its complex earthy mushroom flavours.

Named after the mountain pass which is the start point of North Otago's Waitaki river catchment, this fits with a cheese recipe that dates back to the creation of fine cheese.

Made in a traditional large 1.8kg maxi round, Lindis Pass is only available from specialist cheese delis or factory direct.

If you have chilly jam or some other favourite chutney you can spread a veil of it over the cheese as it is well adapted to blend with other flavours.

Freshly smoked cheese (marzotica affumicata) is ideally eaten on crackers and accompanied with a glass of wine or beer.

 Scamorza is a spun cheese, made from cow's milk, the only worthy substitute for mozzarella when making pizza or panzerotto.

Although made without preservatives our vacuum packaging makes it suitable for storing in the refrigerator (sealed) for up to 30 days.


Scamorza is best eaten at room temperature on a slice of bread, or for a more intense flavour: reheat it for about ten seconds in the microwave.
Better still, in a conventional oven, after a few minutes, the bread becomes crisp and golden and the scamorza (plain or smoked) begins to melt.

For additional flavours, you can always add a pinch of oregano or a mix of herbs, pepper and salt.

Smoked Scamorza

We recommend to try our smoked scamorza (scamorza affumicata). It's wonderful on pizza and if you like different flavours- you can add salmon, ham or even better, speck (bacon).

Plain scomorza is perfect for baked pasta dishes, stuffed eggplant and in panzerotto, wrapped in a slice of ham or speck (bacon) and then melted in a terracotta dish in the oven and served as a hot appetizer or main dish.

It can also be an ideal condiment for plain rice: just put the dish in the microwave for about ten seconds at full power thereby allowing the cheese to melt slightly.

Our Mozzarella is made of cow's milk, in Italy it is referred to as "Fior di latte" (also written as "fiordilatte"), as to distinguish Mozzarella that's made from buffalo's milk.

We make our Mozzarella twice a week, according to the cheese-making traditions of Puglia, the region in Italy we come from.
It has to be fresh to fully appreciate its delicate texture and taste. After 4 days it can still be enjoyed on pizza or melted on bruschetta, but if you're planning to serve a delicious Italian Caprese salad for lunch, the Mozzarella has to be as fresh as possible.

ABOUT US

 
Design Energy started as one guy (Mike) working out of his office at home, providing outstanding engineering solutions to New Zealand manufacturers.
As it turns out this proved popular, meaning in a short time there was more demand for Mike’s time than there were hours in the day.
So the team grew.....

Designing and building robotic production systems is an attractive proposition for engineers. So Mike was able to hand pick engineers capable of producing the same levels of outstanding work that Design Energy had become known for. Mike didn’t always get the right person and engineers who struggled with the extremely high expectations came and went, till what was left was a team of extremely talented and highly motivated engineers.Word of this team got around and Design Energy was approached by two of the world’s top robotic companies to represent their brands in New Zealand. The team took up this challenge and trained with Nachi and Universal Robots technical staff to become experts in the specification and integration of their robots.

Mike Shatford

Managing Director

Mike founded Design Energy in 2007 after building a successful career in design engineering and in various management roles.  Trained as a mechanical engineer, Mike has over 20 years’ experience in the commercial and technical aspects of product development, manufacturing, industrial process and automation.




Andrew Ireland

General Manager

Andrew graduated with honours from Canterbury University completing a BE in mechanical engineering. He has a broad range of experience working as a product designer, mechanical engineer and operations manager for New Zealand design consultancies.




David Bates

Mechanical Engineer

David holds an honours degree in mechanical engineering, and has gained much of his professional experience working as a design engineer for Scott Technology, before joining the Design Energy team.




Chris Rodwell

Mechanical Engineer

Chris studied mechanical engineering at Christchurch Polytechnic, he has extensive engineering experience working as a machine designer for Scott Technology and as the lead engineer at Newsmith Pacific Systems before joining the Design Energy team.

So Mike was able to hand pick engineers capable of producing the same levels of outstanding work that Design Energy had become known for. Mike didn’t always get the right person and engineers who struggled with the extremely high expectations came and went, till what was left was a team of extremely talented and highly motivated engineers.Word of this team got around and Design Energy was approached by two of the world’s top robotic companies to represent their brands in New Zealand. The team took up this challenge and trained with Nachi and Universal Robots technical staff to become experts in the specification and integration of their robots.

The team took up this challenge and trained with Nachi and Universal Robots technical staff to become experts in the specification and integration of their robots.

ABOUT US

 
Design Energy started as one guy (Mike) working out of his office at home, providing outstanding engineering solutions to New Zealand manufacturers.
As it turns out this proved popular, meaning in a short time there was more demand for Mike’s time than there were hours in the day.
So the team grew.....

Designing and building robotic production systems is an attractive proposition for engineers. So Mike was able to hand pick engineers capable of producing the same levels of outstanding work that Design Energy had become known for. Mike didn’t always get the right person and engineers who struggled with the extremely high expectations came and went, till what was left was a team of extremely talented and highly motivated engineers.Word of this team got around and Design Energy was approached by two of the world’s top robotic companies to represent their brands in New Zealand. The team took up this challenge and trained with Nachi and Universal Robots technical staff to become experts in the specification and integration of their robots.

Mike Shatford

Managing Director

Mike founded Design Energy in 2007 after building a successful career in design engineering and in various management roles.  Trained as a mechanical engineer, Mike has over 20 years’ experience in the commercial and technical aspects of product development, manufacturing, industrial process and automation.




Andrew Ireland

General Manager

Andrew graduated with honours from Canterbury University completing a BE in mechanical engineering. He has a broad range of experience working as a product designer, mechanical engineer and operations manager for New Zealand design consultancies.

DHH’s keynote at RailsConf 2019 “on the topic of open source, markets, debts, purpose, and no less than the meaning of life.” It’s pretty wide-ranging (he discusses Marcus Aurelius and David Graeber, Dostoyevsky and Daniel Pink, and throws a little Kierkegaard in the mix, so you know this is going to be a little off-the-wall) but I like the general point: that “open source” can be viewed through a broader perspective than a market metaphor. Broadly, he argues that thinking purely in market terms can be reductionist (there’s more to it than a spectrum with Bill Gates on the one side and Richard Stallman on the other), and that adopting the MIT license is compatible with seeking “happiness” in the sense of finding meaning and purpose with your work – a goal which is harder to achieve with copyright or the GPL. Whether or not you agree with the conclusion, I think it makes for an interesting read.
